I never really thought that it was possible to love two people at the same time, but boy was I wrong!! I am so madly in love with this little man...and his Daddy! They both just melt my heart...

Nautical Baby Boy


Ever since we found out we were having a baby boy, Chad and I were in total agreement that he would be welcomed into a nautical-themed nursery by way of a nautical-themed baby shower! We both love the ocean, lived on the Eastern Shore together and now live on the coast of Maine together...there's no way our baby will grow up not loving the ocean!

On that note, I was completely in love when I checked out the Riviera collection on Baby Gap. How can you not love these pieces??

Gluten-Free Dinner: Curried Rice with Shrimp


So, I have started this 30-Day Detox, and I must say that it's easier than I thought! Of course, I miss ice cream, crunchy things (chips mainly), wine and chocolate, but I feel great and am hoping that as I continue with the detox, I will miss these things less and less!

After doing lots of research on the internet, I found some wonderful gluten-free dinners that the whole family can eat. I am the only one doing the detox, so I don't want to make Chad suffer too much. ;)

I found this recipe for Curried Rice with Shrimp, and I admit that I liked it a lot more than I thought I would! I am not a huge fan of either curry or shrimp, so it wasn't overly appealing at first. However, the end result was delicious, healthy and easy, which makes for an A+ in my book!

Curried Rice with Shrimp

Ingredients:

1 tablespoon olive oil
1 large onion, chopped
2 carrots, chopped
2 cloves garlic, chopped
2 teaspoons curry powder
1 cup gluten-free rice
kosher salt and pepper
1 1/2 pounds peeled, deveined large shrimp
1/2 cup fresh basil

Directions:

1. Heat olive oil in large skillet over medium heat. Add chopped onions and carrots and cook, stirring occasionally  until soft (6-8 minutes).






2. Add garlic and curry powder and cook, stirring occasionally, for 2 minutes.

3. Add the rice, amount of water recommended on box and salt and bring to a boil. Reduce heat* and simmer, covered, for 15 minutes.



4. Season the shrimp with salt and pepper and "nestle" them in the partially cooked rice. 

5. Cover and cook until the shrimp are done (4-5 minutes). Add the basil and serve. 






*I had to switch burners because even "low" was too hot and my rice got really dry really fast.


This was seriously such an easy dish to make, and I even got to hang out with my favorite men while doing it. ;)

30-Day Detox


Have you ever heard of Arbonne? I have been using their products for years and absolutely love it. I never even considered investing in their company until recently, and finally took the plunge in January!

One of the great things about Arbonne is that they have a 30-Day Detox program that is so totally doable, even I can do it!! Never in a million years did I imagine that I would want to do a detox and be able to do one! A shorter detox (3 or 7 days) sounds so much better because it's over so quickly, but I really want to modify my lifestyle and way of eating, and this is my way of doing that!



The detox is mainly an elimination diet: You take away:

  • Gluten
  • Dairy
  • Soy
  • Sugar
  • Alcohol 
Instead, you supplement with Arbonne products:
  • Protein Powder
  • Fizz Sticks (for caffeine and as an appetite suppressant)
  • Fit Chews (for sugar cravings)
  • Fiber Boost
  • Detox Tea
Depending on your "goal," your detox can change a little. If you are trying to lose weight, you really follow the plan to the bare bones. If you are trying to be healthier (me), you follow it, but add a little extra "food" instead of so many liquids. If you are exercising still, you add more "food" in addition to the liquids.

For example, a sample day for me is:

Morning: Breakfast or tea

Breakfast: Protein Shake

Snack: Fizz Stick or tea

Lunch: Protein Shake and veggies/hummus

Snack: Fizz Stick or tea

Dinner: protein, veggies and healthy starch

Before bed: tea

So, I started yesterday (Monday, 1/28) and will go through the end of February. I have heard so many success stories, and I cannot wait to see how my body transforms over the next 30 days! I know that my energy level will sore and I am hoping for less aches and pains as a result of eliminating so many not-so-good things from my diet. 

I will probably post quite a bit about the detox to keep me on track. I will also share some yummy recipes I find!

I LOVE to pin. ;) You can find me here. I pin a lot of baby things, recipes, decor and fashion. I am doing a detox, so I have searched and searched for yummy dinner recipes! What did we do before Pinterest?

I honestly don't do many...I can barely find the time to write my own posts, but I do like to participate in some that relate to me and my family!

5. Why do you blog?

I blog mostly to document our life. I love to take pictures and this is a great way to have a place to store and display them! I blog for accountability when I am working towards goals. I blog to meet other moms. 

6. Tell us one random fact about yourself.

Oh, gosh...I always hate this one. I can never think of anything really random/interesting until 2 days later. Let's see....I have traveled up and down the east coast a million times and have been to California 3 times, but I've never been anywhere in between. I seriously don't think I've visited a state that didn't have a coast! Hmmm...I've never thought of that one before. ;)







January Goals


I love reliability, don't you? I am joining some lovely ladies in talking about how we are doing in achieving our New Year's Resolutions. If I have to report to someone, I'm more like to stay on track. ;)




Instead of doing New Years' Resolutions, I created some goals for the month of January. They are things that I want to incorporate into my life and that I really want to achieve!! I have never been great at resolutions because they are usually time-consuming and life gets in the way (and I have million other excuses).




1. Wash my face before bed. I can't say that I have mastered this, but I am doing it more often, which is a start! I know that I should, but I am just so tired that I like to skip it.

2. Drink 64 ounces of water each day. I have been doing this pretty regularly. My toughest time is on the weekends when I am home because I have a 32 ounce bottle at work that I just continually sip on all day. When I am home, I don't carry that around and have to consciously think about drinking a lot of water!

3. Begin working out again. Ugh...between illnesses, meetings and the weather, I have not been able to do this. My favorite activity is walking outside with Cameron, but with below-zero temps, this has not happened! We have a treadmill at home that needs to be set up...I really have no excuse!

4. Pay off a credit card. We did!! Then we put something else on it. Yikes!! We have been using Ready for Zero, which is really helping us get organized!

5. Look for a church for our family. I can say that I have accomplished this one! We attended two different churches and are attending another one this Sunday. The first one was a no-go, but we loved the second one! I want to try one or two more, but may end up going back to #2 full-time. I have really enjoyed getting back to God.


I will have some new goals for February, but I am hoping to continue to work on some of these since they really help my overall well being. :)

Butternut Squash, Ricotta and Spinach Stuffed Shells

I found this wonderful recipe via Pinterest and thought I could tackle it...in case you didn't know, Chad went to CIA and is an amaaaazing chef. Like, has cooked for celebrities, politicans, etc, and has blown them away. If you live in New England, I dare you to have him cook for you and not be impressed. ;)

Anyways, back to my story...I don't cook dinner very often because when I do, it consists of mac and cheese, grilled cheese, hot dogs, etc...you get the point. I am an awful cook. And I know it. And Chad knows it, so he offers to cook a lot. :) However, when I find a recipe that I think I can tackle, I try it out! Chad usually ends up monkey-ing with it to make it better or just finishing it for me because I can't, for the life of me, put a hot dinner on the table. There's always something that I forget or burn or whatever. But not this time! I completed it start to finish and even changed the recipe a little on my own!

Butternut Squash, Ricotta & Spinach Stuffed Shells



I ended up not adding the butternut squash to the stuffed shells, but just serving it on the side, and boy, was it a delicious dinner!!

My mom also cooked up some sausage for her...I'm not a fan, so I stuck with the vegetarian option!

Here's the recipe:

Ingredients:
2 C Ricotta Cheese
1/2 C Grated Parmesan Cheese
1/2 C Shredded Mozzarella Cheese
1 Smashed Garlic Clove
1/4 C Fresh Spinach*
1 Egg
2 C Butternut Squash
1 Stick Butter
10 Sage Leaves
Grated Lemon Peel
Fresh Lemon Juice
Salt & Peppper
1 Box Jumbo Pasta Shells

Directions:

1. Peel and chop squash; toss in olive oil and roast at 425* for 15-20 minutes. Let cool.

2. Cook jumbo pasta shells

3. In a bowl, combine:
Ricotta Cheese
Parmesan Cheese
Mozzarella Cheese
Garlic
Spinach
Egg
Salt and Pepper
Butternut Squash
Grated Lemon Peel

4. Stuff shells with mixture

5. Bake shells at 400* for 20-25 minutes. 
Cover with tinfoil so the tops of the shells don't get rubbery

5. While the shells are cooking, make a Sage Brown Butter Sauce:
Melt 1 stick of butter until golden brown and bubbly.
Turn off heat because the butter will burn!Add at least 10 sage leaves until slightly crisp.
Squeeze in fresh lemon juice.

6. When the shells are done, drizzle with Sage Brown Butter Sauce and enjoy!

*I will add a lot more spinach next time because you can't taste it at all!

30 While 30

This is a year of HUGE strides for us...we have a lot of "big" goals, but not unrealistic one.

We have been living with my mom since November 2011, and even though we love her, her company and the house, we do want our own place eventually. However, the financial benefits have been huge, and we can't ignore those.

Our major goal for this year involves money. Debt. Not fun stuff. But it has to be done!

So, here is my list of serious goals, fun goals, traveling, money, family, and more!

30 things to accomplish while 30 years old

1. Get a stamp on my passport

2. Take a weekend trip with just Chad

3. Rent a camp for the week

4. Get my teaching certificate in Maine

5. Pay off most of our debt

6. Plan a fantastic 1st birthday for Cameron

7. Find a church to attend

8. Baptize Cameron

9. Get a permanent job

10. Save $2,000 cash

11. Have a date night at least once a month

12. Volunteer

13. Read the bible

14. Have dinner with Dad at least every 2 weeks

15. Go apple picking

16. Drive up Route 1

17. Meet other Moms

18. Continue to grow my Arbonne business

19. Get Cameron involved in activities outside of day care

20. Run in a race

21. Find our own house

22. Do 30-Day Detox

23. Do 100 push ups and a 5-minute plank

24. Pay for somebody's dinner at a restaurant

26. Send real cards

27. Go one month without spending money (except groceries)

Detox Smoothie

So, I am starting a 30-day detox in February, but I have already started to incorporate some aspects of the detox into my diet already (parts that I hope to continue after the detox).*

One of the major changes I have made is taking cow's milk out of my diet, which includes switching to using Almond Milk in my smoothies. {Sidenote: Do you know how bad cow's milk is for you? Yikes!}

I made a smoothie the other day and wanted to share...I am always just using whatever I can find in the fridge to throw into my smoothies, but this one was especially tasty!!

Ingredients:
1/2 Cup Almond Milk (amount varies depending on the consistency you prefer)
1 Banana (this made for a very banana-y flavor, so use 1/2 if you aren't a fan)
A handful of spinach (you can't taste this at all, so don't be shy!)
1 Cup of frozen strawberries
2 Tablespoons Almond Butter (Almond Butter makes the shake thicker, so use less if you don't like a thick consistency.)
2 Scoops Arbonne Vanilla Protein Power
1 Cup of ice (again, this depends on your preference)


All ready to blend...

This made a more than one shake (I always tend to make more than I need because I keep adding stuff), but it's always good to have some leftovers waiting for you in the fridge when you reach for a snack!

Homemade Baby Food - It's Easy!


When Cameron was first born, I couldn't wait for the day that we could pull our Baby Bullet out of its box and make our precious son homemade food.

Ahhhh...the dreams and aspirations of new moms. ;)

When Cameron turned 4 months old, his doctor said it was ok to start him on rice, oatmeal and/or food. (Of course, we could only try one thing at a time.)  We tried rice and he was not having it. Well, we had a butternut squash sitting on the counter that needed to be used, so Chad roasted and pureed it, and Cameron couldn't get enough!! My dreams had come true!! My son ate food made by us and he loved it...

Well, reality continued to set in, and life kept moving, and we started buying baby food off the shelves, and guess what? Cameron liked it...imagine that! A baby liked (and survived) jar food. Here, I thought he would start growing extra limbs or something if he ate store-bought food!

But, then Pinterest got the best of me, and I started pinning baby food websites, and Chad wanted to make more baby food, so off to the grocery store I went!!

And the result was this:


Our concoctions include:
Apple Carrot
Apple Squash
Sweet Potato
Kale Banana
Zucchini Banana
Broccoli Apple Kale
Spinach Pea Pear
Broccoli Apple

Apple Carrot
2 Apples (peeled and boiled)
3 Carrots (peeled and steamed)

Apple Squash
1 Apple (peeled and boiled)
1/2 Squash (steamed)

Sweet Potato
3 Potatoes (baked)

Kale Banana
1/2 bag kale (wilted or not)*
2 Bananas (peeled)

Zucchini Banana Pear
3 Zucchini (peeled and steamed)
2 Banana (peeled)
1/2b bag frozen peas (steamed)

Broccoli Apple Kale
1/2 bag frozen broccoli (steamed)
1 apple (peeled and boiled)
1/2 bag kale (wilted or not)*

Spinach Pea Pear
1/2 bag fresh or frozen spinach (wilted or not; steamed)*
1/2 bag frozen peas
2 pears 

Broccoli Apple
1/2 bag frozen broccoli (steamed)
2 apples (peeled and boiled)

Butternut Squash
1/2 squash (steamed)

*We didn't wilt our spinach or kale and it turned out fine! 


So, your shopping list should include the following:
4 apples
1 butternut squash
3 sweet potatoes
3 carrots
1 bag of kale
4 bananas
3 zucchini
1 bag of frozen broccoli
1/2 bag of spinach (Use the other half to make yourself a smoothie for energy!)
bag of frozen peas
2 pears

Once everything is peeled, steamed, boiled, baked, etc...combine the ingredients in the blender and continue to add as much water as needed. Some babies need a more watery consistency, but Cameron is ok with a thicker one, so it totally depends on your baby. 

We bought GladWare Mini Round 4oz Containers to store everything in because we can just pull one out of the freezer, and it's the perfect portion for Cameron! When he wasn't eating 4oz+ at every meal, we used ice cube trays and just defrosted 2 at a time. (We would freeze them in trays then transfer them to ziploc bags once frozen.)





So, there you have it!!! Someone commented on Instagram that they can't make baby food at home...it's easy!! If I can do it, so can you!!

Oh yeah, we never used the Baby Bullet (or anything specific to a baby). We just use our kitchen blender and food processor, and they work great!!

Our Birth Story: Part II


PART II
I have to back up a little so that Part II makes sense…
It was late Saturday morning and the anesthesiologist entered our hospital room to give me an epidural. I am so afraid of pain that this was part of our plan the entire time, unless it wasn’t an option for whatever reason. 
So, the resident - we learned that there are nurses, med students, residents, attendees and doctors, each with their own level of authority - starts talking to us about the procedure, what he’s going to do, etc. The doctor comes in a few minutes later and sits to the side to observe the resident. At this point, I had felt like a guinea pig on display for three days, so this was no different. {Sidenote: We spent 4 nights in the Labor/Delivery Room…these rooms are meant to be used for hours, not days, so when nurses would come back on for their shift the next day, we would get, “You’re still here?!” Haha}
Okay, back to the epidural. The resident positioned me, got his stuff in order and started the procedure. Well, his first “attempt” was unsuccessful…he said the spot was too tight. Okay. I figured it was no big deal kind of like when they go to draw blood and need to pick a second spot. Silly me should have thought that he was putting a needle in my SPINAL CORD! Gah…anyways, he never mentioned that there could be complications or to watch for any side effects; he just moved to the next spot and was successful.
So…back to Part II
Sunday, July 1, approximately 2:45am
Cameron was born and I was beside myself that I had a beautiful baby boy. They laid him on my chest and we couldn’t stop staring at him, kissing him and holding him as close as possible. 
The doctors continued to “work on me” for quite a while, but I was so enamored that I didn’t pay attention as to why. Basically, my body had been forced into labor and when the labor was done, so was my uterus. In an ideal situation, the uterus contracts to a position so that the uterine walls stop allowing everything through to the baby, including blood. Well, my uterus was tuckered out from being forced into labor for almost four days that it didn’t finish its job and was still allowing blood through the walls - 1,700ml of blood to be exact. The doctors were frantically trying to get my uterus to contract by massaging it internally and externally and finally did get the blood to stop. Thank the good Lord above that I had no idea what was going on because I probably would have had a nervous breakdown. (Please excuse my description of the medical procedures - I may be slightly off and/or used the wrong vocabulary, but I just learned all of this while in the hospital!)
Monday, July 2
After a late night (well early morning), Cameron slept in the nursery and Chad and I got a little rest in the delivery room. Around 7am, the nurses woke us to take us to the Mommy/Baby wing where we would stay the rest of the time. I was SO EXHAUSTED and had no idea why - I thought that child birth was just that hard! At this point, I had no clue that I had lost so much blood and was now anemic! So, I slept a LOT of Monday and when I finally got up to use the bathroom, I had the worst headache in the entire world. Once again, I just thought it was part of child birth, but when I mentioned it to my nurse, she brought up the failed epidural and said that it sounds like I had a spinal headache. The best way to cure it was to do a blood patch - a procedure in which they take my own blood and fill the hole that was made so that spinal fluid stops leaking. 
We scheduled a blood patch to be done that night and in the meantime, I got a blood transfusion to replace some of the blood that I had lost. After the blood transfusion, I felt like a new person! It was amazing…it was like someone had inserted caffeine into my veins. Except that I still had this awful headache. I had the blood patch done that night and rested until the next morning.
Tuesday, July 3
I woke up and felt great! There was no headache, I had energy and we had our family together. My doctor came in and said that I could get another blood transfusion - I agreed that it would help me get back to close to 100% and did that on Tuesday afternoon.  We planned on “checking out” the following day and starting our life together at home. Until my headache came back that night…I thought I would try to sleep it off because I wanted to go home so badly, but it wasn’t that easy.
Wednesday, July 4
I talked to my nurse about my headache returning and she said that there was a 5% chance that the blood patch wouldn’t work. An anesthesiologist came up to talk to me and said they could do another blood patch. The idea of putting another needle in my spinal cord freaked me out so I opted for Plan B - wait it out. He said that it should heal itself by Friday, so I decided to just suck it up and wait. GAH. Worst decision ever. On top of that, my blood pressure continued to rise so they told me that I should stay until Thursday so they could monitor me. Thank God for the nursery - they took such great care of Cameron so Chad and I could get some sleep and so Chad could return to work for a few hours. Looking back, it was so refreshing to have someone to watch over Cam while I recovered, but I am also sad that I missed that 24/7 time with him.
Thursday July 5
We finally got to go home - headache and all! We packed up, snatched our new son and headed on home. What a great feeling! I hadn’t left the hospital in 8 days and it was starting to wear on me. Thank goodness I was so drugged up most of the time; otherwise I probably would have become quite the b*tch! When we got home, Chad took great care of Cam while I continued to “rest” so my headache would go away…but it didn’t.
Friday, July 6
Chad had to work most of the day, but came home as quickly as he could to take care of Cam again. I was barely able to get off the couch to change/feed him and felt so awful that I couldn’t be there to take care of my brand new baby. IT KILLED ME!  Finally, around 6pm, Chad called my doctor and told them that I had decided to have another blood patch done. My headache had not gotten any better and I could not continue like that!! Mom took me to the hospital around 9pm while Chad stayed home with Cameron. 
Saturday, July 7
The anesthesiologist started the blood patch around midnight and told me to lay flat on my back for two hours…poor Mom was crunched in a chair trying to sleep while I was comfy on the operating table! When they came in at 2am to check on me, my headache had gotten better but had not gone away. They told me to lay back down for two more hours - and when I finally stood up around 4:30am, I felt like a new person. Mom and I left the hospital, grabbed some McD’s for breakfast and headed home. I continued to lay in bed all day - there was NO WAY I was going to mess this up!! {Sidenote: We think that the first blood patch failed because I got up and moved to quickly.}
By Sunday, I still felt great and was able to be with Chad and Cameron again. Being away from them and from my new family was the hardest thing I have ever had to do. However, it was a blessing in disguise because Chad and Cam got to bond so much over those few days…he was the one feeding, changing and playing with him, and now they are the bestest friends!!
So, that’s the story…It’s long and kind of woe-is-me, but I learned a lot!! I learned that I will not be induced again unless absolutely medically necessary for either myself or my baby. I learned that I will get an epidural again - and have a blood patch done until my headache is gone (IF they botch it again). I learned that doctors are not always right - they each have their own practice (they call it art) and opinions and you need to do what you feel is right. 
At the end of the day, nothing that happened is permanent and nothing will affect my next pregnancy (and yes, there will be a next pregnancy…in a few years!). I will be considered “high risk” due to my anemia, but my body will be okay and so will my future baby(ies)!

Our Birth Story: Part I

I had written this before, but it was sooo long, that I decided to write a shortened version. This is a story that I will certainly never forget, but it does bring back a lot of memories when I write it. 

So, here it goes...


First, a few things to keep in mind...Doctors change shift at 7:00 am, so each day starts when a new doctor comes in with a new method to try! Mom, Dad and Chad were at the hospital this entire time...talk about troopers!


Wednesday, June 27
We were admitted to the hospital at 5:30 for an induction due to increased blood pressure and swelling. Little did we know that this would be an extremely looooong induction. They started off with Misoprostol, which is a pill they inserted (guess where) every 4 hours. The purpose of “miso” is to soften your cervix and hopefully start or progress dilation by forcing contractions. Well, it got me to 1cm after 3 attempts and I had very little contractions that I couldn’t feel at all. So, that brings us to…
Thursday, June 28
After little progress, the doctors suggested trying Pitocin to get my contractions to become more frequent and stronger. Yes, contractions were stronger, but I was still only 1cm dilated and I was becoming frustrated. The contractions hurt and we were making no progress…talk about a standstill. (We watched a lot of movies, played a lot of games and took a lot of naps!)

A third option: The Cook Balloon was suggested by the doctors. This is literally a balloon that they insert to force the cervix to open. The doctors and nurses have “never seen this not work!” Fantastic! Let’s do it…12 hours later, I was 2cm dilated. We had a (desperate) discussion with the doctor on duty and decided that we would stop all induction interventions overnight - get a good night’s sleep - and schedule a c-section for Saturday morning (all while sitting in the bathtub, which was amazing).
Saturday, June 30
Mom and Dad arrived at the hospital around 8am with the expectation that we would have a c-section that morning. Instead, the new doctor on duty (they switched at 7am) decided that a c-section was not the best option because I am young and healthy and Cameron was not in any major danger. So…we were back to square one. We decided to give the Pitocin another try (but bump it up a lot) and to get an epidural so that the contractions wouldn’t be painful…this started around 12 noon and at 10pm, I was still only 4cm dilated - woohoo….progress! But not enough. I decided at this point that the doctor would come back in at midnight and check my progress and if I hadn’t progressed anymore, we would stop the Pitocin and wait for his birth to happen naturally. {Sidenote: Around 2:00, I started to get super bad pains in my shoulders, neck and head...I thought they were just part of contractions since I couldn't feel below my chest, so Chad, my mom and dad just continued to give me massages and put ice on my shoulders and head. Little did I know it was from a botched epidural...more on that tomorrow!}

Sunday, July 1
The doctor came in at midnight, felt around a little and announced that I was NINE (Yes, 9!) cm dilated….holy schnikes!! Everyone got excited, I tried to come out of my drug-induced coma that I had been in for 12 hours and things started rolling.
Cameron was born on Sunday, July 1 at 2:45 am, weighing 7lbs 4oz and was 21” long. He was perfect.
